Pol Pani Pancakes a.k.a. Coconut Jaggery Pancakes

Another absolute favorite to put on your Avurudhu/New Year Table! Some call it ‘Wellawahum’, others know it as ‘Surutaappam’, but one thing’s for sure,  its filled with melted jaggery and treacle with bursts of fresh coconut mixed through and an aroma of cardamom wafting in the air. This is one pancake you just cannot miss out on :)


Recipe:
Ingredients for the pancake-
Flour – 1 Cup
Eggs – 1 Large Egg
Warm Milk – 3/4 cup
Salt- a PinchAdd all the ingredients to a blender and blend until mixed well and liquid. Add more warm milk if necessary. The batter should be of pouring consistency.Ingredients for filling-
Fresh Coconut – 3/4 Cup
Grated Jaggery ( Kithul) – 1/2 Cup ( can add more or less according to your taste buds)
Kithul Honey/Treacle-2 tsp if you have it on hand
Salt – A pinch
Pepper – A pinch
Cardamoms bruised-5-6 (remove before filling the pancakes)
Butter – 1 heaped Tbsp
